How to make bacon wrapped green bean bundles

- Boil the beans in salted water to partially cook them.
- Place them in a bowl of iced water and allow to dry.
- Season the beans.
- Sprinkle the bacon with granulated onion, brown sugar and smoked paprika.
- Wrap the beans with the bacon.
- Bake in the oven until the bacon has crisped.

Can you make them ahead of time?
These bean bundles are best to serve as soon as you’ve made them so that the bacon is nice and crispy. You can wrap the beans in the bacon a couple of hours before you want to cook them, so you just need top pop them in the oven to serve.
Why do you need to place them in iced water?
This is a crucial step when cooking these beans. Placing them in ice water stops the cooking process so that they don’t get too soft and still have a nice bite to them. It also helps to keep them a vibrant green color.
Tips!

I haven’t made this yet, but it is very similar to what i have been making for family events for 20 years, this recipe is probably better than what i have been making. I make 3 or 4 cookie sheets of these just to feed 25 to 30 relatives and always run out because everyone loves it, even if they don’t like green beans. this last Thanksgiving I decided to try it a different way due to the amount of people i make this for. I used all the ingredients but didnt wrap the beans, instead i made it all in a pot, using all the ingredients and it tastes the same, but so much easier to make, and much quicker too. I will bundle them when making it for a few people, but when making for a bunch of people this is the way to go. it’s not as pretty but the taste is the same, and great for large groups of people.
