Can enchilada stuffed peppers be frozen?
I get this question all the time! The answer is YES, you can freeze stuffed peppers! Be sure everything is fully cooked and cooled before freezing, and be sure to wrap them well (in plastic wrap) and store in an airtight container.
You can also store them in the fridge instead, if you know you’ll be reheating and eating them within 3-5 days. Makes them a great meal to make for your favorite new mama, friend in need, or spouse for work the next day. High fives all around!
Can I make these Enchilada Stuffed Peppers healthy?
Of course! If you want your Mexican stuffed peppers to be a little healthier, all you have to do is go easy on the cheese and sub ground turkey for the beef. Simple right?

Can i freeze them if so how long would i thaw them N how long to cook
I have never frozen them but I would think with the ingredients that you could. I would let them thaw in the fridge first and then cook just about 5 minutes longer than listed. Hope it works out well!
How long should I thaw thEm for in the friDge
I’ve just never prepared them that way so to be honest I’m not totally sure. I’d say for at least an hour. Hope that helps!
How long will the peppers stay Good if i quadruPle the recipe
These are best right away just because the peppers can get pretty soggy the next day. They’re still good, just not as good. I’d say as far as food safety you’d need to eat within 2-3 days and keep refrigerated. Enjoy!
This is the time for meal. My mouth is really watering to taste this stuffed peppers. It’s different and delicious.
This is awesome Reciepe I loved it
I can´t eat beef so I am wondering if ground pork would work as well? This looks delicious.
Cheese makes everything better! These are gorgeous!
This was delicious and my son who claims to “hate” peppers asked for seconds. I used ground turkey and added rice and black beans. Pared with salad and breadsticks delicious.
Did you use canned beans? If so did you simmer them prior to putting them in the pepper and then let cook for another 30-40 mins? Or did you put beans in directly from can?
This is a great idea! Stuffed peppers are one of my husband’s favorite dishes, but it never crossed my mind to put enchilada filling in the center. We’ll be having these soon. Love how cheesy they are!
