I haven’t made this, but have a hint: When purchasing the bell peppers, look for those with 4 sections on the bottom.
These are female peppers, (those with 3 are male) and they will stand in the dish better.

I used a can of diced tomatoes with green chilies instead of just the peppers, and I added cooked rice to the meat mixture. The filling made a large amount, it filled 5 large peppers and I have enough leftover to use as filling for tomorrow nights dinner. It was a great recipe and everyone raved about it.
