Notes from the Test Kitchen
Ripe bananas develop a warm and sweet flavor, almost reminiscent of rum. The riper they are, the sweeter your bread will be. We love the slightly bitter contrast that semisweet chocolate chips bring to this bread, keeping it balanced in flavor and perfect for both breakfast and dessert.
How to Make Chocolate Chip Banana Bread Step by Step
Prep the Pan: Grease and flour the bottom of a 9×5-inch loaf pan. Set the oven rack to the lower-middle position and preheat the oven to 375°F.
Whisk the Dry: In a large bowl, whisk together 2 cups of all-purpose flour, ¾ cup of granulated sugar, ¾ teaspoon of baking soda, and 1 teaspoon of kosher salt; set aside.
Mix the Wet: In a medium mixing bowl, mash together 3 very ripe bananas, ¼ cup of plain yogurt, 6 tablespoons of unsalted butter, 1 teaspoon of pure vanilla extract, and 2 tablespoons of orange zest.
Fold the Batter: Lightly fold the mashed banana mixture and 1 cup of semisweet chocolate chips into the flour mixture with a rubber spatula. Mix the batter just until combined – it should be lumpy and thick.
Top the Bread: Transfer the batter to the prepared pan, smooth out the top and, if desired, arrange 1 sliced banana on top.
Bake the Bread: Bake in the preheated oven for 55-60 minutes, or until the bread is golden brown and a toothpick inserted in the middle comes out clean. Transfer bread to a cooling rack and cool in the pan for 5 minutes. After 5 minutes, turn the bread out of the pan, and turn right side up. Serve warm or at room temperature.
