Any kind of cake decoration seems complicated, but these are the exact opposite. All I had to do was slice, bake, and shape! I’m not usually a baker, and definitely not a cake decorator, but I went all in on this one. These pineapple flowers were just the thing to finish off my pineapple banana Hummingbird Cake. I was super surprised by just how easy this recipe was, too. All I needed was to slice the pineapple nice and thin (which took a little practice, but I did it and so can you!). Tips for Success
- It’s really important to get rid of as much moisture as possible at every step, so make sure to pat the slices dry with paper towels (use more than one!) and place them on a wire rack so there’s plenty of room for air to circulate.
- If in doubt, bake them a little longer. We’re going nice and low-and-slow here, so there’s not much danger of them burning.
- Add a slice of bread or a sealed food-grade silica/desiccant packet to the container you store the pineapple in to absorb any excess moisture and help it stay nice and crisp.
How to Store
Store dried pineapple slices in an airtight container in the refrigerator for up to 6 months. If you have a vacuum sealer, that works even better! You’ll want to check on them every few days for condensation or moisture. If you see any, pop them back in the oven to continue to dehydrate before storing them again.

I made these pineapple flowers for my Hummingbird Cake, and they look so pretty! They look great on just about any cake, cupcake, or dessert, though!
But the best secret about these pineapple flowers? They’re delicious! Since they’re actually just dried pineapple slices, they make a really tasty and healthy snack too. You can follow this same recipe to make dried pineapple chips for a snack or appetizer; just skip the part where you shape them into flowers (or don’t…nothing wrong with a fancy flower-shaped snack).

They were east to make. I have my mom’s meat slicer, got 36 slices from medium pineapple. The leftovers kept their shape. The flowers on cupcakes drooped overnight. Still looked elegant

I used mandolin slicer and dried with paper towel and put in oven on baking/ cooling rack on a baking pan and had them in oven for 3 hours at 200 degrees. Took them out and they hardened quickly but were flat then overnight they softened and now in muffin pan. How long will they need to hold their shape?
It truly depends on where you live, temperature, moisture, etc. Just keep checking every half hour/hour to see if it seems strong enough for you!
