Hi Janet, it sounds like you overmixed the mousse. This is a pretty common mistake and totally fixable! It’s important to gently fold the whipped cream into the white chocolate mixture– those stiff peaks are what keep the mousse light and fluffy, and it’s easy for them to deflate and turn back into pudding. You can whip some more cream and gently stir it into the mousse to fix this issue!
