Store leftover grilled salmon with avocado salsa in an airtight container in the refrigerator for up to 3 days. I prefer to enjoy leftover salmon cold, but you can also reheat in a 275°F oven for about 15 minutes, or until warmed through.

Freeze grilled salmon fillets in an airtight container or Ziplock bag for up to 4 months. Let thaw overnight in the refrigerator before reheating. I do not recommend freezing the salsa.

How to Make Grilled Salmon with Avocado Salsa Step by Step
Season the Salmon: Mix 1 teaspoon of kosher salt, ½ teaspoon of ancho chili powder, 1 teaspoon of ground cumin, 1 teaspoon of ground paprika, 1 teaspoon of onion powder, and 1 teaspoon of ground black pepper together. Rub 2 pounds of salmon fillets with 1 tablespoon of olive oil and this seasoning mix. Refrigerate for at least 30 minutes.
Make the Salsa: Combine 1 cubed avocado, ½ of a sliced red onion, the juice of 2 limes, and 1 tablespoon of chopped fresh cilantro. Chill until serving time.
Grill the Salmon: Preheat the grill to medium (350-375°F). Grill the salmon to desired doneness (about 3-4 minutes per side). Top with avocado salsa and enjoy!

I’ve only tried the salsa, because I was looking for a way to use some extra avocado with some kind of fish (and I ended up here!).
I have to say the salsa is super delicious! I made it the “correct” way the first time, but both I and my partner agreed that it was too “dry” when it’s chunky like that, it sort of feels like you need something extra as sauce. So this time around I mixed in sour cream (because I know people use that for guacamole as well) and added a bit of home made ranch spice so the cream didn’t wash out everything and it turned out great! So I will definitely use it both ways but for different things in the future, such a great stable recipe, and the lime just takes it to the next level!
I also forgot to mention that I mashed up 1 avocado to a paste (like guacamole) and mixed in the sour cream, and then added the other avocado in cupes, to still retain some delicious bite!

I LOVE this recipe! I make it at least once every week for dinner and usually have enough for lunch the next day. Easy and fast. The spice mixture is fantastic (I multiplied the spice measurements several times over and made a whole jar of it to keep on hand) and the avocado salsa on top is perfect. I wasn’t big on fish before but this is seriously my favorite recipe now. My boyfriend loves it as well
Omg, Becky! This was absolutely wonderful! It was just for me and my boyfriend and I used 1.5lb salmon and used 3/4 of all the spices. I always bake my mostly thawed salmon at 420 for 20-25 minutes with a citrusy seasoning. But this was way better than any salmon I’ve ever made. My boyfriend said “this is my favorite that you’ve made.” Thank you! And like a few others, I added halved cherry tomatoes to my bake. I threw this over a spring mix salad that was dressed lightly with balsamic vinaigrette.
