Beef Foldover Quesadilla Hack (Viral Tik Tok Recipe)
Level up your quesadillas with these beef foldover tortillas. Loaded with seasoned ground beef, cheese, sour cream and pico de gallo, they are super quick and easy to make.

- 1 lb ground beef
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 8 large flour tortillas
- ½ cup shredded queso cheese
- ½ cup pico de gallo
- ¼ cup Sour cream
- Fresh cilantro as garnish
Brown the ground beef. Stir in chili powder, cumin, and paprika. Drain and set aside. Wash the pan and return to the stove over medium high heat.
Lay tortilla flat. Fold in half to create a seam in the tortilla marking the middle. Unfold, and make a small cut to the center of the tortilla.
Imagine the tortilla is split into 4 equal sections. Add a couple spoonfuls of the taco meat into one section, cheese to another, sour cream to the next, and finally pico de gallo to the last section.
Starting with the bottom left quadrant, fold the tortilla up and over the top left, then the top right, then the bottom right.
Add 1 tbsp olive oil to the pan. Add quesadillas and cook for 3 minutes per side.
Remove from heat and garnish with fresh cilantro. Serve immediately and enjoy!
- Fold the tortilla in half, and then in half again, so you can see the quarters where you should place the filling.
- Use a good melting cheese for this recipe as this acts as the glue to hold the tortillas together.
- Take care not to overload the fillings or they will spill out when you fold them.
