- 2 tablespoons unsalted butter (¼ stick)
- 2 tablespoons all-purpose flour
- 2 cups half-and-half
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- 1 tablespoon granulated sugar
- 20 ounces frozen peas
In a medium saucepan, melt the butter over medium heat. Once melted, sprinkle over the flour and whisk to combine.

Slowly whisk in the half-and-half until combined. Whisk in the salt, pepper, and sugar.

Bring the mixture to a low simmer and cook until the mixture can coat the back of a spoon, about 2-3 minutes.
Stir in the peas and continue to cook until they are warmed through.

Serve immediately.
- In place of the half-and-half, you can use whole milk or heavy cream.
- If using canned peas, drain and rinse thoroughly and add only during the last few minutes of cooking to keep them from turning mushy.
- If your peas are too thick, stir in a little milk or chicken broth, a tablespoon at a time, until thinned. If they're too thin, stir in a little heavy cream.
