Pickle Relish Recipe
This delicious and classic homemade Pickle Relish is the perfect topping for hot dogs or hamburgers. A little sweet, a little savory, a little salty, and perfectly crunchy, no one would judge you for eating it straight out of the jar!

- 2 cucumbers seeded and finely diced
- ¾ cup finely diced red onion
- 1 yellow bell pepper finely diced
- 2 tablespoons sea salt
- 2 tablespoons pickling spice
- ½ cup apple cider vinegar divided
- 2 tablespoons all-purpose flour
- ½ cup simple syrup (equal parts sugar and water)
- ½ teaspoon celery salt
Mix together the diced cucumbers, diced onion and diced bell pepper together in a medium sized bowl.

Sprinkle the salt and pickling spice all over the vegetables and mix together well.

Cover the bowl with plastic wrap and refrigerate overnight.
When ready to finish the relish, drain the vegetable mixture in a fine mesh sieve and rinse 2-3 times with cool water or until the water drains clear.
Press out any leftover water with the back of a large serving spoon. You want to remove as much excess moisture as possible.
In a medium sized saucepan, mix together ¼ cup of the apple cider vinegar and the all-purpose flour until smooth and free of lumps.

Gradually pour in the remaining apple cider vinegar and simple syrup and heat over medium heat until bubbling.

Stir in the vegetable mixture and celery salt and bring to a simmer.

Simmer for 10-15 minutes or until thickened and the smell of vinegar has dissipated.
Allow to cool completely before serving.
Yield: This recipe makes approx. 3 cups of relish.
- For a spicier relish, add some crushed red pepper flakes with the pickling spices.
- For a dill pickle relish, add some fresh or ground dill with the pickling spices.
Storage: Store pickle relish in an airtight container in the refrigerator for up to 2 weeks or in the freezer for up to 4 months.
